Vegan Broccoli Salad
I created this recipe for myself for dinner but you could certainly share some with your canine companions.
- 2 Heads of Broccoli
- 1 Orange
- ¼ cup of Dried Cranberries
- 1 Tablespoon plus 1 Teaspoon Olive Oil
- 1 teaspoon Minced Garlic
- Salt
- Pepper
- Preheat Oven to 350 Degrees
- Cut Broccoli and let sit in a bowl full of cold water to help get any dirt or bugs off of the florets.
- Oil the bottom of your baking sheet or baking dish using the 1 teaspoon of oil.
- place the clean and dried broccoli in the dish. Use a bigger dish then you normally would so that the Broccoli cooks evenly.
- Cover the broccoli with the minced garlic and then place into the preheated oven.
- Allow to cook between 20 - 30 minutes.. At 20 minutes it will still be crunchy at 30 minutes your broccoli will be much softer but also loose the bright green color. I cooked mine for 30 minutes because I don't like raw broccoli but it is completely up to you.
- While it is cooking prepare the dressing.
- Cut the orange in half. Juice half of the orange and use the rind to make orange zest which you can put directly into the mixing bowl.
- The other half of the orange you will want to segment to place in the salad.
- I use the smallest holes on a normal grater (a zester would make pieces that look almost like shredded cheese).
- Add the 1 Tablespoon of oil and mix well.
- Then add in the salt and pepper. You will have to do this by taste and you can always add a little extra once you dress the salad. Mix well.
- Take the Broccoli out of the Oven and immediately place on a large plate or serving tray to cool.
- Once room temperature you can dress the salad.
- Place the dried cranberries on the top along with orange segments
- Pour the orange dressing over the salad and serve or put into a container to bring with you to a picnic or potluck.
- Cooked to the 20 minute mark this would make a perfect salad course. Cooked to the 30 minute mark it makes a great side dish.
This is a recipe that your dog can enjoy too! The garlic in the salad is cooked completely and will help along with regular flea and tick product application to help keep the bugs away from them. The olive oil is great for their skin and coat. I am vegetarian I 100 percent believe that dogs should have a balanced diet that includes meat or fish sources and I would never serve my dogs just this salad. I would give it to them as a snack or as a special addition to their dinner.
PS I never let the stalk of the broccoli go to waste. It is a great addition to a vegetable soup stock and would add extra flavor to chicken soup. Today instead of saving it I cut it up and with a little olive oil, salt, and pepper stir fried it up in a cast iron skillet. If you do stir fry the stalk you will want to either start on a low setting or allow the pieces to brown up so that they are fully cooked. Some people will cut off the outside leaving just the white inner portion but I think you loose too much of the stalk that way so I just cook it really well.
