Vegan Broccoli Salad
 
 
This light Broccoli Salad is sure to please even your toughest customers. Kids will love if because of the orange and dried cranberries and your Vegan, Gluten Free, Dairy Free Friends will be thanking you for bringing something to the Pot Luck that they can eat.

Ingredients
  • 2 Heads of Broccoli
  • 1 Orange
  • ¼ cup of Dried Cranberries
  • 1 Tablespoon plus 1 Teaspoon Olive Oil
  • 1 teaspoon Minced Garlic
  • Salt
  • Pepper
Instructions
  1. Preheat Oven to 350 Degrees
  2. Cut Broccoli and let sit in a bowl full of cold water to help get any dirt or bugs off of the florets.
  3. Oil the bottom of your baking sheet or baking dish using the 1 teaspoon of oil.
  4. place the clean and dried broccoli in the dish. Use a bigger dish then you normally would so that the Broccoli cooks evenly.
  5. Cover the broccoli with the minced garlic and then place into the preheated oven.
  6. Allow to cook between 20 - 30 minutes.. At 20 minutes it will still be crunchy at 30 minutes your broccoli will be much softer but also loose the bright green color. I cooked mine for 30 minutes because I don't like raw broccoli but it is completely up to you.
  7. While it is cooking prepare the dressing.
  8. Cut the orange in half. Juice half of the orange and use the rind to make orange zest which you can put directly into the mixing bowl.
  9. The other half of the orange you will want to segment to place in the salad.
  10. I use the smallest holes on a normal grater (a zester would make pieces that look almost like shredded cheese).
  11. Add the 1 Tablespoon of oil and mix well.
  12. Then add in the salt and pepper. You will have to do this by taste and you can always add a little extra once you dress the salad. Mix well.
  13. Take the Broccoli out of the Oven and immediately place on a large plate or serving tray to cool.
  14. Once room temperature you can dress the salad.
  15. Place the dried cranberries on the top along with orange segments
  16. Pour the orange dressing over the salad and serve or put into a container to bring with you to a picnic or potluck.
  17. Cooked to the 20 minute mark this would make a perfect salad course. Cooked to the 30 minute mark it makes a great side dish.
Notes
This Vegan Broccoli Salad is perfect to bring with you to a Summer BBQ or Potluck Dinner. It is more durable then a salad full of mayonnaise and much healthier for everyone. I did add a few drops of lemon juice to my dressing because I like the taste of mixed citrus fruit but it is not necessary. I wouldn't recommend using just lemon juice but a mix of multiple citrus would be fantastic. Next time I make this I am going to use a Ruby Red grapefruit.
