Do you and your dog love Blueberries? Good news Blueberries are fat free, high in fiber, and give you some of that much needed vitamin C without all the acid. Blueberries are not only considered a SuperFood for you but for your dogs as well. Other then eating them with your cereal or just plain in the middle of the day for a snack, how can you and your dog add more Blueberries to your day?

By now you are saying how can 2 ingredients make a perfect healthy snack. Or all the yogurt covered fruit I have seen includes tons of sugar and not so healthy ingredients for me or my dog. I promise not only is this recipe healthy but you will be making it tonight (or running out to the store to buy blueberries and this other healthy ingredient).

I am calling it a dessert because I served it as a dessert last weekend to guests but honestly these yogurt covered blueberries are a healthy snack for just about any time of the day.

Ingredients
  • 1 pint of Blueberries
  • 1 individual serving of vanilla flavored or honey flavored Greek Yogurt
  • 1 long baking sheet
  • Wax paper
Instructions
  1. Wash the Blueberries. Make sure that you get rid of any stems or leaves. Let dry. You want to make sure that the Blueberries are completely dry before proceeding to the next step. After washing mine in a colander I shook it so the excess water would come out and then I put them on the baking sheets on a sheet of paper towel to get any of the water off. I let them sit for a bit while I prepared something else.
  2. Once the blueberries are completely dry line the baking sheet with wax paper.
  3. Stir the yogurt so that it is all one smooth consistency.
  4. Dunk a handful of blueberries in the yogurt don't stir them around or they will get lost in the yogurt. With freshly washed hands fish the blueberries out of the yogurt and place them on the wax paper lined baking sheet. Make sure to leave room between the Blueberries so that they do not stick together.
  5. Continue until all of your blueberries are coated and on the sheet. You might need two baking sheets depending on how big yours are.
  6. Place the Yogurt Covered Blueberries in the freezer. I left mine in over night.
  7. Once they are frozen you can easliy take them off the wax paper and place them in a ziplock bag in the freezer for storage.
Notes
Only take out as many Yogurt Covered Blueberries as you can eat in one sitting. You can let them thaw a little bit but make sure not to leave them out for long before you plan on eating them. Since there is no hard candy shell the yogurt will melt and you will have a bowl full of blueberries and yogurt. They will not refreeze well at all. Taking these out of the freezer 5 minutes before the kids step off the school bus is fine or as you are sitting down to watch tv or read a book for the night. Oh and the dogs will be happy eating these directly from the freezer. The crunch and coolness will be a big hit for them while it is still so hot out.
