Did you know that the ancient Olympic Games were a Greek thing?
True story. The Games were held in honour of Zeus and they had a mythological origin. The different city-states of Greece gathered together to compete and celebrate. I bet the food was fabulous.
I’m a huge fan of greek food.
Greek salad is a staple here and we love making foods with classic greek flavours. We figured that it was only right to honour the original Olympians with a greek feast.
Besides, who doesn’t love greek-inspired stuffed chicken?!
Chicken rolls are great for a lot of reasons. These bite sized rolls make a great appetizer or you can serve a bunch of them and make it a meal. If you’re having a party, it’s really easy to whip up fillings in a bunch of flavours and serve an assortment of tastes, ensuring there’s a little something for everyone. The dogs love that these bite sized snacks and they are perfect for sharing. We always make dog friendly fillings and they can be sure that a bite (or two or three) will be snuck their way.
Here’s what you need:
2 chicken breasts
1 cup feta cheese
½ cup frozen spinach
¼ cup sundried tomatoes
½ – 1 tbsp. chopped fresh parsley
Cooking for Dogs?
Optional: 1 clove minced garlic
Optional: 2 tbsp. diced black olives
Olive oil (to grease pan)
Pre-Heat oven to 350F. Place chicken flat on your cutting board and slice into three thin “cutlets”. Pound out flat with a meat mallet.
Place a generous scoop of filling in the center of the chicken. Roll it up and secure the ends with toothpicks.
Lightly grease a cookie sheet with olive oil and arrange the chicken rolls on the tray. Bake for 20 – 30 minutes, until chicken is cooked through.
Serve with Tzatziki.
The pups and the people at our house are wild over these chicken rolls. The best part is how versatile they are. You can stuff them with pretty much anything!
