These Chewy Peanut Butter Banana Bars are sure to please your entire family. Bring the bars to the office to share at a meeting or have them at home and add a scoop of your favorite ice cream on top. These bars are perfect for picnics or a summer BBQ too!

Ingredients
  • 1 Banana the more ripe it is the better it will be. I use my overripe bananas in this recipe.
  • 1 cup peanut butter
  • 2 eggs
  • 1 cup of sugar
  • pinch of salt
  • oil to coat the baking pan - I used olive oil today but you could use sunflower or coconut oil or even peanut oil
Instructions
  1. Preheat the oven to 350 degrees.
  2. Cut the banana and put it into a mixing bowl. Crack the eggs into the bowl and turn on the mixer for about 30 seconds to help break down the banana a bit more. Add the sugar and the peanut butter and turn the mixer back on for about 2 minutes.
  3. Coat the baking pan well this recipe is very sticky!
  4. Pour the mixture into the baking pan and put into the preheated oven. I suggest placing it on the top rack so that the bottom does not cook faster then the top.
  5. Set the timer for 20 minutes. The inside will always be chewy but you don't want to overcook it. If it needs more time put it in for another 5 minutes.
  6. Let cool and serve or serve warm with a scoop of icecream (or dairy free "icecream" of your choice) on top.
Notes
You can use a mixture of white sugar and brown sugar for a richer taste. Personally I like the all white sugar version better and so will most people but if you are serving them as dessert after a fancier meal I would go either half and half with brown sugar or almost completely brown sugar. If you are serving these outdoors or at a buffet type meal with dogs present if they happen to get a few bites of one or you happen to spot a child going bite for bite with the dog there is no need to worry. Peanut butter, banana, and eggs are perfectly healthy for your dog while they don't need the sugar they will find these be to an awesome special treat.

I was asked to make something for my mom to bring to her office for a meeting tomorrow. It had to be easy to carry and easy to eat because they aren’t going to have a ton of utensils. I decided to make these easy Gluten Free Peanut Butter Bars which tend to be crowd pleasers. So I got everything ready and started the recipe. In the middle of making them I had to jump on a conference call so the batter was made and the oven hot. About a half hour later I was able to get back to them and put them in the oven. Thinking I was the only one who was using the oven at the point I put the two trays on the bottom shelf on the oven but then people kept opening the oven which made the bottom heating elements go back on and the bottom cooked much faster then the top. Lesson learned always bake these on the top level of the oven as far away from the heating elements as possible. As you can see they came out fine anyway but just something you should be aware of when making them.

PS. These will always be chewy on the inside unless you want to turn the oven down and cook them long and slow or turn them into drop cookies and bake for about 12 minutes.

    • You could certainly add some chocolate chips or chocolate ice cream but then it wouldn’t be safe to eat around dogs. Plus it is hard to find soy free chocolate and when I do it is expensive so would rather enjoy it on its own.
