Sunday Morning Breakfasts are a big deal at our house.

A family favourite is (and always has been) pancakes. There’s something about pancakes that is just so cozy and breakfast-y. Even the dogs love pancakes, once Kolchak stole and hid a plateful of pancakes left forgotten on the kitchen counter. I found them hours later, tucked into the back of his kennel. I guess he was “saving them for later”.

When we switched our dogs to a grain-free diet, we had to stop sharing pancakes with them.
We discovered Felix had a grain-allergy and all these floury treat we’re at the root of his terrible itchiness. Every weekend, I’d make breakfast and those big, puppy dog eyes would stare up at me from the kitchen floor. It broke my heart.

That’s when we started making coconut flour pancakes.
A tasty, grain-free alternative to regular pancakes, these have quickly become a family favourite and taken the place of our old recipe. They’re definitely not your traditional pancakes though. They have a rich egg-y taste, a hint of coconutty sweetness and because of the added protein, they’re really filling.

Ingredients
  • ¾ c. coconut flour
  • 1 tsp. baking soda
  • Pinch of salt
  • 4 eggs, room temp
  • 1 c. coconut milk
  • 2 tsp. vanilla
  • 1 tsp. real maple syrup
  • Coconut oil, for frying
  • Real Maple Syrup, Coconut Cream or Fruit, for topping
Instructions
  1. Preheat griddle or frying pan to medium-high. Stir in coconut milk, vanilla & maple syrup.
  2. In a medium bowl, sift the coconut flour. (I know ¾ c. isn’t much flour, but coconut soaks up a whole lot of moisture. You’ll be surprised!) Add in the baking soda & salt.
  3. In a separate bowl, beat the eggs until frothy, around 2 minutes or so. (Don’t skip this step! It’s important.) Add vanilla & maple syrup.
  4. Pour a little more than half of the wet mixture into the flour mixture and stir together until all the flour is mixed in. Allow the mix to sit for 5 minutes, so the coconut can absorb the liquid. Slowly add the rest of the liquid until your batter is the consistency of thick brownie batter.
  5. Melt a small amount of coconut oil in your pan. Ladle small amounts of batter onto your pan. You don’t want to make big pancakes. This recipe works great if you make “silver dollar” pancakes that aren’t bigger than a couple inches in diameter. Bigger pancakes might break apart.
  6. Cook for a 3 – 5 minutes, until the top starts to dry and the bottom is browned (don’t look for the usual “pancake bubbles”.) Flip pancakes and cook for a few minutes more.
Notes
Serve plain to your dogs (if you are sharing), but humans will appreciate these Gluten Free Coconut Pancakes topped with coconut cream, maple syrup and/or fruit.

  18. OMG these sound delicious. I never would have thought that a dog would eat a pancake with coconut in it. I didnt think they liked coconut- but pancakes they would probably eat.

    LoL! I had to laugh out loud at Kolchack stealing pancakes and saving some for later. I had a dog once who stole a whole cheese cake I made and had just finished putting the cherry pie filling on top when I had to go get the phone I think it was. I came back to cherry pie filling all over and a dog with a messy guilty face and a full tummy. I was mad at the time because I was looking forward to that all day long but I did have to laugh once I calmed down. Just wished he would have saved me a piece! The pancakes sound like they would be yummy in our puppies tummies.
