Baked Butternut Squash Chips

Good for you Butternut Squash made into healthy baked chips. Perfect snack or as a side with lunch or dinner.

Ingredients
  • 1 Small Butternut Squash (Instead of buying a large butternut squash which would be hard to word with but several smaller ones to make more chips.)
  • Salt
  • Oil - one batch I used sunflower oil and one batch I used olive oil
Instructions
  1. Preheat Oven to 350 Degrees
  2. Wash Butternut Squash. Even though you will be peeling off the skin it just makes it easier to work with.
  3. Cut Butternut squash in half. Using a good peeler (I prefer cutco or oxo because they work the best for me) peel the skin off of the top part of the squash.
  4. The squash will be slightly sticky so you can put it in a bowl of water to clean it.
  5. Feel free to skip the step and just start cutting. Cut into thin slices (the thinner the slice the shorter the cook time). Some of the slices you might want to cut the middle out of but the top portion should not really have any seeds in it so it would be perfectly safe to just eat the whole piece.
  6. Put the Butternut Squash chips in a bucket of water to soak and get any stickiness off.
  7. Start the same process with the bottom part of the squash. The bottom part is where you will find the seeds and all the parts that you will not want to eat. It will take several slices to get down to the seeds.
  8. Once you get there you will want to clean all of that out. Since it is Spring it is a great time to save the seeds and plant them so that you can grow your own Butternut Squash for next season or you can just put them in the compost bin and let nature take its course.
  9. Once you have cleaned out as much of the insides as possible you can start cutting chips again. I started to cut an area out like I had in the top part of the squash but soon realized there would not be much left so I just made sure it was as clean as possible.
  10. Take the first batch out of the water refresh the water and put the new batch in to clean off.
  11. Oil the baking sheet you are going to use. I poured enough oil to cover the bottom and then used that oil to make sure that both sides of the chips were covered in oil.
  12. Once both sides are covered in oil sprinkle salt over the chips immediately before putting into the preheated oven.
  13. Flip the Butternut Squash over halfway through cook time.
  14. You can leave off the salt and sprinkle with cinnamon and sugar for a sweeter treat.
Notes
Butternut Squash is a great treat for your dogs. As long as they are eating an already balanced diet they do not need the salt or the sugar from sweet version. They might really enjoy it if you sprinkle some cinnamon on the chips before they go in the oven. I know Davinia and Indiana will stay in the kitchen waiting if there is cinnamon cooking in the oven. So don't be surprised if you find a few extra bodies in the kitchen with you while these Butternut Squash Chips are baking.
