There are lots of things you can do with your abundance of zucchini and summer squash that we think might be a break from the ordinary!



Pickles
Have you ever made pickles? They are fairly quick and easy to make and keep for quite a while. Most people use cucumbers but you can also use zucchini and summer squash. It is something different and variety in our diets is so important to help keep our bodies healthy and functioning at 100%.

Zucchini bread
How much zucchini bread can you really eat in one sitting? While some people can eat a whole loaf or more, others just want a little. Make up some zucchini bread and toss it in the freezer. Be sure to wrap it well so that it doesn’t get freezer burn. You could also make muffins if you’re going to eat them within a couple weeks or so. Fried Zucchini
Fried zucchini becomes a favorite food of almost everyone that tries is. Fried zucchini happens to be extremely popular on the Eastern and Western coasts, but most people I’ve come across in the Midwest have never heard of it. Just batter and deep fry your zucchini the same way that you would make fried mushrooms at home. Easy and delicious, if not quite healthy. For those looking for a healthier still fun alternative to deep fried food we think these Baked Zucchini Sticks are perfect.

Zucchini Pasta
This is a newer idea. Make zucchini pasta or noodles to go with your next dish. Either cut them into long strips with your vegetable peeler or a mandolin, if you have one. Lightly blanch the thin slices of zucchini and serve with your favorite pasta sauce. An alternative idea is to use these thin zucchini slices as noodles for your lasagna. Still not convinced? Pass it off to a friend
Have you found a car that’s unlocked ok don’t break and enter but you could leave some next to the car or on the hood of the car if you know the owner will be back out soon? Leave some in there. Have you tried stuffing your neighbors’ mail boxes full of squash? Try taking some to your office. There’s bound to be someone who likes squash and didn’t grow a garden this year. Donate it to your local food bank. They’re always looking for fresh food to supplement their pantries.
