I know that it was something that I wanted in my kitchen and even though I don’t use it nearly as often as I should considering the price of the thing I know if I didn’t have one I would decide I do like to bake and that I absolutely NEED one.

This is probably in my top 5 Giveaways on Two Little Cavaliers ever. I love this tool and I know you will all love it too and maybe just maybe it will inspire you to start cooking for your dogs or at least make them special treats once in a while. I honestly completely forgot I had singed up for this Giveaway and so when I received the email with the information I was so excited. I think I am inspired to make

Meringue Cookies Recipe:

3 large egg whites

1/4 teaspoon cream of tartar

3/4 cup superfine or (if you don’t have superfine sugar simply take granulated white sugar and process it for about 30-60 seconds in a food processor)

1/4 teaspoon pure vanilla extract

Meringue Cookies: Preheat oven to 200 degrees F and place the rack in the center of the oven. Line a baking sheet with parchment paper. You can form the cookies with a pastry bag fitted with a plain tip. I use a ziplock bag and cut off one of the bottom tips. They will not turn out perfect and 100% uniform but I don’t think that really matters.

In the bowl of your electric mixer, with the whisk attachment, beat the egg whites on low-medium speed until foamy. Add the cream of tartar and continue to beat the whites until they hold soft peaks. Add the sugar, a little at a time, and continue to beat, on medium-high speed, until the meringue holds very stiff peaks. Beat in the vanilla extract.

Note: The meringue is done when it holds stiff peaks and when you rub a little between your thumb and index finger it does not feel gritty. If it feels gritty the sugar has not fully dissolved so keep beating until it feels smooth between your fingers.

You can make the Mirengues as big or little as you would like just be sure to keep an eye on the timer and check them sooner the smaller you decide to make them.

Bake the meringues for approximately 1 1/2, rotating the baking sheet from front to back (about half way through) to ensure even baking. The meringues are done when they are pale in color and fairly crisp. (The meringues will release easily from the parchment paper.) Turn off the oven, open the door a crack, and leave the meringues in the oven to finish drying several hours or overnight. The meringues can be covered and stored at room temperature for several days. But in all honestly you will probably eat the batch before they have much time to cool off.

    I love Kitchen Aid products. My daughter and I have been sharing a mixer about 10 yrs and I would love to have one of my own. Using the Kitchen Aid mixer makes my cake batter and icing so much better. I have used other makes over the last 40 yrs and nothing can beat Kitchen Aid for durability.
