Rio 2 Cookies with Royal Icing



Most of my friends know that Davinia, Indiana, and I love tropical weather. Actually we love everything tropical the sun, trees, wildlife, and food. So when I heard that RIO 2 was coming out I thought it would be fun to share some tropical friends. No there are no tropical colored dogs but we don’t discriminate. Plus when a friend said she would love to make us a batch of cookies to share with our readers how could I turn that down? I couldn’t. Bright colorful cookies to serve at a fun party while you are watching a really cute movie. It doesn’t get much better.

RIO 2 Cookies with Royal Icing



Ingredients and Supplies:
• Chick cookie cutter (inexpensive and easy to find at Easter time!)
• Round cookie cutter
• Your favorite rolled sugar cookie recipe
• Prepared Royal Icing – in 2 shades of blue, black, white, and green (other colors if you choose)
• Piping bag and icing tips – #2 and #4 round tips
• Blue shimmer powder

Instructions for your RIO 2 Cookies:
Cut and bake sugar cookies according to recipe instructions. Bake several “chick” cookies and round cookies to decorate as flowers and as Blu and Jewel. Allow cookies to cool completely before decorating.

Notes for creating your RIO 2 Cookies:
If you have never used Royal Icing or Hard Icing, it is not nearly as intimidating as it looks. You will need Royal Icing for outlining and flooding. The flooding icing is created by adding small drops of water to the icing and stirring until it is easily spreadable. A good rule of thumb is to lift a small amount of ice up and let it fall back into the bowl. It should reabsorb into the rest of the icing at about 10 seconds.

Fill your piping bag with royal icing in the prepared colors for outlining your cookies and details. The cookies pictured required 2 shades of blue, white, black, and green. They then required flooding icing in the 2 shades of blue and the green.

Begin by drawing a line around the outside of the cookies with your preferred color.
• For the chick cookie shape, I outlined with dark blue. Outline all cookies before moving to the next step.
• For the Blu & Jewel cookies, I used the dark blue to draw the outline of the bird. They are cookies remember, so your art skills do not have to be perfect!
• I used green icing for the backgrounds of the Blu and Jewel cookies as well as the flower so I drew an outline of green around the edge of the cookies.
• For the flower, I used light blue to create the flowers outline.



RIO 2 Cookies

Once all of the outlining is done, begin flooding or filling in the outlines with the thinned icing. Add a small amount of the thinned icing and spread with a small tipped spoon or toothpick. Add more icing as needed but before icing begins to harden. Allow all flooding icing to harden for approximately 2 hours before adding final details.

Once the flooded icing has become hard, use the colored icing and piping bag to add details such as the beaks, eyes, feathers, and such to the cookies. You can be as creative as you want to be! I also added a little bit of blue shimmer powder with a small paint brush to give the birds some sparkle!
