Here at Two Little Cavaliers we like to bring you special recipes that are not only good for your dog but good for you as well. I know that both Davinia and Indiana like to share quinoa with me when I have some and that’s before the goat cheese and garlic paste used in this recipe so I am sure they would love it this way. I am pretty sure they have never had plain beets mainly because I have never cooked beets at home though I know it is included in some of the food and treats they have eaten over the years. This recipe is just another reason to add to wanting to try to make beets at home. The truth is I always shied away from beets at salad bars and would never order anything with beets until a friend of mine made an appetizer (for a potluck meal at another friend’s house) with beets and hard boiled egg that I tried just because I knew she was such a good cook and I thought it was really good. I thought it was so good that I put it on my to do list to make when having guest over in the future. This recipe from our Cooking for Dogs Editor might just have to be added to that list or I could just make beets two ways one as an appetizer and one as a side.



Roasted Beets and Quinoa Salad Cooking for Dogs


What you will need:
3 medium beets with the greens (I used three tasty varieties: regular ol’ red beets, candy cane beets, & yellow beets)
1 cup cooked quinoa
2 tbsp. chopped fresh dill
1 ½ oz. goat cheese crumbles
2 tsp. olive oil
1 tsp. apple cider vinegar
1 pea-sized dot of garlic paste (optional)



Pre-heat oven to 375.
Peel beets and cut them into small bite-sized pieces. Toss beets with one teaspoon of olive oil, garlic, salt and pepper.
Place beets on a rimmed baking sheet and pop in the oven for thirty minutes or until the beets are fork tender.
While the beats are cooking, heat remaining olive oil in a nonstick sauté pan over a medium high heat. Reserve 2 tbsp of onion and set aside. Toss the remainder of the onion into the oil and cook for about five minutes or until the onions are tender.
Stir in beet greens and apple cider vinegar. Allow to cook until the greens are just wilted – this will only take a minute or so.
Allow everything to cool a bit before assembling the salad.
In a large bowl combine the two tablespoons of raw onion that you reserved earlier with dill, beet greens, roasted beets, and quinoa. Season with salt and pepper.
Gently toss in the feta cheese and serve. Enjoy!
