Watermelon Salad


It has been unseasonably warm in Vancouver for the last few weeks.
There hasn’t been a drop of rain, the sun is shining and it’s been warm. Not hot enough for frozen treats, but definitely warm enough to leave both the pups and the people at Casa de Kolchak craving a refreshing treat.

My dogs are wild for watermelon.
My Felix loses his fluffy little mind when he sees me bring one home and Kolchak will sit there catching little chunks of this juicy fruit as long as I am willing to throw them. Watermelon is a great snack for you and your dogs; it’s light and sweet, genuinely good for you and as an added bonus, it’s even low calorie!
On a sunny afternoon, a plate of watermelon is enough to make me and the pups feel like summer is just around the corner.


That’s one of the great things about watermelon, isn’t it?

You don’t have to do anything to it. Just slice and serve. When I’m feeling adventurous, I might pop chunks into the freezer to enjoy as a frozen treat, but other than that, I’ve never “made” anything with it. Since I have been trying to stick to a good, healthy diet, I have been eating a lot of salads. To keep my salad recipes from getting a little boring, I’ve been grilling family and friends, asking about their favourite salads.
I was intrigued by the suggestion of watermelon salad.

It was just so unexpected. I had never even considered the idea of herbs and watermelon. I was sure that fresh watermelon would add just the right touch of sweetness and freshness as a tasty spring salad. It was love at first bite – and the dogs loved it too!

Here’s what you need:

• 1 baby watermelon
• 3 -4 tbsp. crumbled feta
• ½ tbsp. chopped herbs (like basil, tarragon, parsley, or mint)
• 4 tbsp. extra virgin olive oil
• 2 tbsp. apple cider vinegar
• Salt

Chop watermelon into bite sized chunks or scoop it out of the rind with a melon baller. Feed a piece of watermelon to your dog to check the flavour ;0)
In a small bowl, whisk together olive oil and apple cider vinegar. Give your dog another piece of watermelon, to make sure it’s still good.
Toss watermelon chunks with olive oil and vinegar mix, along with the herbs. Give a watermelon chunk to your dog to see if they like the dressing. (Kolchak loved it).

Sprinkle a little salt and the feta cheese over the salad. Serve and enjoy.


I’m pretty sure Kolchak was in his happy place.

As I ate my salad, I gave my dogs each several more chunks of watermelon and even a bite or two of feta cheese. Kolchak adored it. I adored it. This salad is the perfect cool snack for a warm day. We can’t wait to try it again, maybe trying a different herb.
